FLORIDIA CHEESE

Founded in 1955 by Sicilian migrant Mauro Montalto, Floridia Cheese began as a small backyard operation in Melbourne, crafting ricotta with traditional methods. Today, under the leadership of son Tomasso, his wife Angela, and the third generation, Floridia remains a family-owned producer of premium Italian-style cheeses.

The range includes fresh and stretched curd cheeses like Fior di Latte, Bocconcini, Scamorza, Burrata, and Buffalo Mozzarella, as well as aged Pecorino and Parmesan—crafted with high-quality Australian milk and a commitment to authentic, artisanal cheesemaking.

GIUSEPPE GIUSTI

Italy’s oldest balsamic vinegar producer, the Giusti family founded their company in 1605. Over 400 years of history dons this iconic producer and they have protected the craftsmanship preserving the ethos and taste. The historical prowess of Giusti is visibly evident on their labels, which showcase the many gold medals they have accumulated over the centuries, including a royal seal of approval as the choice balsamic vinegar for the Royal House of Savoy.

Molino Carrieri is a truly compelling proposition. Hardly something that can be easily said for an ingredient as ubiquitous as flour, yet this is a project that is almost certain to contribute to the betterment of Australian food, and for us that’s worth getting behind

Grown on regenerative farms across NSW — the Liverpool Plains, the Central West, the Fitzroy Basin — and independently tested to confirm no reportable chemical residues, no synthetic fertilisers, and non-GMO. The grain is traceable to farm level. The flour is milled to perform: seven distinct blends, each built for a specific purpose in your kitchen.
