COLLA S.P.A

Emilia Romagna, Italy

Founded in 1921 in a small dairy in Cadeo, Piacenza, Colla carries forward a century-old tradition rooted in the origins of Italy’s most iconic cheeses. Producing both Grana Padano—one of the world’s most widely enjoyed PDO cheeses with heritage dating back to medieval monastic craftsmanship—and the esteemed Parmigiano Reggiano PDO, made exclusively in its protected regions between the Po and Reno rivers, Colla embodies authenticity, patience and place. Their cheeses are crafted in rhythm with the seasons, reflecting a deep respect for tradition, time and the natural qualities of exceptional milk.

Grana Padano DOP 12 Month

Aged for a minimum of 12 months, Colla’s Grana Padano DOP offers a delicate yet full-bodied expression of this iconic Italian cheese. Crafted in the Po Valley from carefully selected milk within the protected PDO region, it presents a pale, finely grainy texture with a gentle sweetness and aromatic freshness. Approachable and versatile, its balanced flavour profile makes it equally suited to table service or as a refined finishing touch across both classic and contemporary dishes.

Parmigiano Reggiano DOP 30 Month

Aged for over 30 months, Colla’s Parmigiano Reggiano DOP reaches a remarkable depth of character, developing a dry, crystalline texture and an intensely savoury profile. Produced exclusively within its historic PDO region, this “king of cheeses” reveals complex notes of dried fruit, spice and broth, underpinned by a long, persistent finish. Bold yet beautifully balanced, it is a cheese of true distinction—crafted slowly, and best appreciated in its purest form.
