Cantabrian Anchovies 50g

Small Cantabrian Anchovies (Engraulis Encrasicolous) are harvested in the Bay of Biscay and landed while still incredibly fresh. The best fish of the catch are trucked to the factory a few kilometres away. The anchovies are then cleaned and salted for almost a year. Then they are hand filleted, hand packed in olive oil and canned. Yurrita is a brand offering Marine Stewardship Council (MSC) certified anchovies, something which means a lot to the true lover of sustainable seafood. This is the brand that Basques love to eat.

Open a tin and serve with bread and crisp white wine. Lay on sliced tomatoes or use in a Caesar salad.

Boquerones (White Anchovies) 100g

One of the ways Spaniards love to eat their little fish is semi-cured in a special blend of wine vinegar and extra virgin olive oil. Anchovies cured in this manner are called boquerones. They are the classic tapa, served perhaps with some bread, skewered on a pintxo with an olive, or enjoyed eaten with a fork with a glass of crisp white wine or beer.
