Caseificio Maremma is a family-owned business founded by Spadi Fortunato in the 1960s and located in the coastal town of Follonica. It is here that the daily deliveries of fresh Tuscan Maremma sheep’s milk is transformed into a variety of traditional cheeses. Caseificio Maremma has a deep commitment to working with only local farmers to ensure that age old traditions of Maremma sheep farming are preserved. After an initial short ripening period, the cheese is taken for aging in cheese caves high in the Castel del Piano hills. Like many of our best producers, Caseificio Maremma combines a modern and hygienic factory with the age-old traditional techniques, such as hand salting and cave ageing. Their cheese is a unique expression of the wild pastures of the Maremma.

Pecorino Toscano ‘Stagionato’ DOP

A melt-in-your-mouth Tuscan Pecorino. Not to be confused with Pecorino Romana, the Pecorino Toscana is made in much smaller wheels that are creamy and rich in flavour. This lends Tuscan pecorino to a wide range of uses; wonderfully paired with fruit, as an antipasto, or accompanying vegetable dishes or cured meats.

Pecorino Il Predicatore*

The Pecorino Il Predicatore, which aptly translates to “the Preacher of Pecorino”, will be one you tell your friends about. It’s made with high-quality, fresh Maremma sheep’s milk and pressed with Tuscan grapes, giving the cheese its distinctive purple rind. The wine marc brings both fruity and earthy notes to the cheese, while the Maremma sheep’s milk gives it a delicious creaminess. As this cheese ages it will begin to develop a light covering of natural white and blue cheese moulds. This will aid in flavour development and presents beautifully.
