Formed by cooperatives of farmers in 1969, Paysan Breton has been committed to promoting the local economy in Brittany and Pays de la Loire - both in terms of dairy production and the products it manufactures.

With quality being the top priority from the outset, the star ingredient in all of their products is top-quality milk. Smaller manageable farms allow the farmers to monitor their cattle closely. The milk is also collected from a short radius, and freshly delivered to the manufacturing facilities, in order to be turned into butter, cheese, or fermented milk.

Brie ‘L’Original’

Paysan Breton L’Original Brie is made to resemble a traditional raw milk brie. It’s most important differentiating factor from Australian bries is that it’s a lactic brie made without any stabilisers and stored in a beautiful wooden box.

It has an earthy, mushroomy flavour with brassica notes and a rich and creamy texture typical of French brie. Perfect on a cheese platter or melted.

Most bries that are available have stablisers in them for commercial reasons. They soften quickly and uniformly and then their aging process all but stops. They offer neither the range of aromas found in traditional Brie, nor the satisfying texture of Brie that matures more gradually.

Compared with stabilised Brie, which relies on a lot of rennet for quick coagulation, the Brie l'Original recipe uses minimal rennet. Instead, the cheese makers depend on carefully chosen cultures to ferment the milk slowly, producing lactic acid and replacing the flavour-generating enzymes lost when milk is pasteurised.

The finest Bries however, do not have any stabilisers, and in France, there are two origin-protected raw milk versions called Brie de Meaux AOP and Brie de Melun AOP.

After aging, the lactic L'Original Brie not only will look similar to Brie de Meaux, but it's flavour profile will resemble its raw milk counterparts with a silky, creamy yet supple, and a full, mushroomy flavour. L'Original Brie does have cream added to boost the milk fat, giving it a more luscious, supple texture than classic Brie.
